Right now {{ObserverMethod}} cannot be change in an extension. In the philosophy of {{ProcessAnnotatedType#setAnnotatedType}} or {{ProcessBeanAttributes#setBeanAttributes}} we could add a {{ProcessObserverMethod#setObserverMethod}} to change properties on an observer.
