It all depends on what you want to work on:
 - Hibernate Core: Steve or Gail would be able to direct you
 - Hibernate Search: I can direct you
 - Hibernate Validator: Hardy can direct you
 - Hibernate Static Metamodel Generator: Hardy can direct you

All in all, go to http://github.com/hibernate
fork the repo you are interested in to study the code and look for unresolved JIRA that can interest you.
