I don't think anyone has tried it, but I don't know any reason you couldn't.  Simply don't declare the hibernate components in components.xml.  (but leave in the the transaction manager configuration in jboss-beans.xml)  Give it a shot and let us know how it worked.

Out of curiosity, what kind of application are you trying to create that would use seam without JPA?
