I have found it's really hard to see if you are actually using the cache.  I see this in your config:

  | 			<property name="hibernate.cache.use_second_level_cache" value="false"/>
  | 
Which doesn't seem right. Try turning on debugging in hibernate and JBoss cache and see what's going on.
