Now I understand your question.  Did you read the readme file that comes with 5.0 beta 1? I states that hot deploy is not working in this beta.  To deploy anything, you have to restart the server.

I'm not sure about the @EJB annotation, I know it will be working for the final 5.0 version (because it is a Java EE 5 requirement), but I don't know if it is in beta 1.
