OK...I should have read my own post :) Putting teh wsdls and schemas under WEB-INF seems to do the trick.

Files are under 

WEB-INF/schema/Employee2.xsd 
WEB-INF/schema/TypeDefinitions.xsd 
WEB-INF/wsdl/schema/EmployeeServer.xsd 
WEB-INF/wsdl/EmployeeService.wsdl 

and all seems to work now
