Version attribute of a Process is not is not supported in the BPMN2 spec. It is available in the properties window of the Eclipse process editor, but at this point, it is never used and is more for documentation purposes. If you use the latest Oryx designer (  http://people.redhat.com/tsurdilo/oryx/1.0.0.048-SNAPSHOT/designer-1.0.0.048-SNAPSHOT-jboss.war http://people.redhat.com/tsurdilo/oryx/1.0.0.048-SNAPSHOT/designer-1.0.0.048-SNAPSHOT-jboss.war , and rename it designer.war before deploying it) we have added a custom version attribute that you can set and will also add it in the jBPM process engine in the near future.
