You should use ContentMarhsallerHelper class to serialize task content, take a look  https://github.com/droolsjbpm/jbpm/blob/master/jbpm-gwt/jbpm-gwt-core/src/main/java/org/jbpm/integration/console/TaskManagement.java#L102 here for an example code how to do it.
