Simplest solution is rename launcher to "JBoss Developer Studio" in .product file. In this case Mac version would have right application name JBoss Developer Studio.app and that would fix menu name as well. But linux and windows versions would have launcher names:
JBoss Developer Studio (linux)
JBoss Developer Studio.exe (windows)
