Hi,
I think this translation is good, it explains the underlying concept:

fine-grained = a grana-fine
coarse-grained= a grana-grossa

What do you think? 
Soon Pete is going to add the file Performance.po and make the compilation of the manual work. Now it doesn't work.
When the manual is available we'll receive (I hope) some feedback from italian people.

NOTE: 
when I am not certain of a translation, I used the Comment option (poedit editor has it).
And in some cases I left the english translation in brackets after the italian translation.
Later we could improve those sentences we're not certain of. PO system is great!

I assign you some work ;) if you have time. These chapters are very small.
