Do you mean both user level Teiid queries and the queries issued to the translators?  If that's the case, we could log the results to the command logger as well, but at a trace level.  The concern would be that there is a substantial performance hit to write all result.  Some more details may help flesh this out a bit.  Are you looking for logging to filter to specific columns?  Are you expecting to customize this logging or just to post process log files?
