OData and Swagger are two completely separate different REST based systems with different metadata systems. Although there has been some efforts in the OData community to represent OData metadata in Swagger format, there is no official path there. OData JSON based $metadata is also still in working draft in the specification and has not defined clear paths to Swagger (or OpenAPI). Unless the metadata is compatible between these two systems, one can not use Swagger UI (or any client tools) with OData.

As far as Teiid providing a Swagger like UI is out of the question, this must come from other OData based community projects.
