Gitbook templating works well enough.  See https://github.com/shawkins/teiid-documents/commit/ed8b7b8c631cfd7720e68a668f952f46881bb712 - we can make another book by adding a book.json with targeted overrides.  There doesn't appear to be any way to just pass in overrides on the command line, so for now there will be redundancy in the the book.json files.  I've then added examples of conditional templating to exclude books, pages in a book, and content in a page.  That process will need to be repeated much more though and I'll have to ensure that it's not introducing any rendering errors into the default case.
