For the jQuery Mobile version we already have some work done by Joshua Wilson https://github.com/jboss-developer/jboss-wfk-quickstarts/tree/2.6.x-develop/contacts-mobile-basic . It will be pretty easy to adapt that for cordova (just changing the endpoint URL / adding splash screen)
