Create documentation listing all endpoints, methods, query params, headers, request & response bodies.

WHY

This will act as a reference for anyone implementing the API on the server.

Notes

Swagger Doc - docs live within the repo - Swagger UI can be used to browse the files locally. Create a doc folder with the Swagger Docs there.
