yes having the same issue. It is also listed here: https://hibernate.atlassian.net/browse/HHH-10485?jql=project%20%3D%20HHH%20AND%20fixVersion%20%3D%205.2.13%20AND%20text%20~%20%22EntityGraph%22

But even with Hibernate Version 5.4.2 it won't recognize the FetchMode.SUBSELECT using EntityGraphs.
Any news on this? Would be great to know which versions you used Nathan.
