The features and operators supported are documented in the Hibernate userguide, chapter 18.

Currently the support is limited to the Simple Features Specification.

The suggestion to include both postgresql and postgis version is not sustainable in my opinion because we'd end up with way too many dialects to be manageable. The better route is using HHH-10901 so we can separate the Postgis support from the dialect.
