Thanks @Steve Ebersole for your reply and sorry for my mistake. Honestly I did search before open the ticket but I didn't find what you posted. That makes sense and seems what I'm looking for. To be honest however seems the combination "hibernate.globally_quoted_identifiers"=true + "hibernate.globally_quoted_identifiers_skip_column_definitions"=true continue to give the same result I had before (it continues to escape my columnDefinition).
