Yes there are archetypes - actually all the wizards in JBoss Central that is above project examples/wizards are based on these archetypes (they call them behind the scenes) so if you use the Java EE Project one its creating one based of archetype that is based off the kitchensink-ear's.
Once we get Beta1 i'll do a post outlining these and their coordinates so you can get that info for command line usage if you prefer.
