After a long search I found the trick: I edited dao/daohome.ftl in the plugin jar
eclipse\plugins\org.hibernate.eclipse_3.4.0.v20110215-1252-H31-GA\lib\tools\hibernate-tools.jar
Not very elegant and has to be repeated after each update of jboss tools, but at least it works.
