Just try to build the console, why you are building jBPM5 if you want to modify only the console? By the way the jBPM5 Source code that contains the maven project descriptions to build the distribution are also located in github: https://github.com/droolsjbpm/jbpm/
Fork the repository from there as you fork the BPM Console.
