What version of jBPM/Drools Eclipse plugin you are uisng?
There is a known issue (JBPM-3020) as discussed in http://community.jboss.org/thread/160687.
It has been resolved and you might want to try the latest SNAPSHOT plugin with jbpm-human-task-5.0-SNAPSHOT.jar
