In fact you can do it - it just requires additional step to perform prior to signaling:
String executionId = processInstance.findActiveExecutionIn("wait
state").getId();
and the use this executionId when signaling. Timer will be destroyed as well.
Please let me know if this is what you expect.

It would be useful to be able to either signal an execution that is in a wait state with
a timer attached to it, or cancel a timer and the attached job and then signal the
execution.
