RE the 'example-settings.xml' instructions for EAP 6: I see an examples-setting.xml file in the root of the quickstart download listed here: http://download.devel.redhat.com/devel/candidates/JBEAP/JBEAP-6.1.0-DR4/. There is always an example-settings.xml file shipped with the EAP 6 quickstarts. Where are you downloading them from?
