All of our binding (gateway) components support the ability to configure a MessageComposer and/or ContextMapper, except our REST Binding. We should have consistency in this regard across components.

The other binding components should serve as adequate examples on how this is done. It will mean a schema change in addition to java changes. It will then also bubble out to our tooling.
