I believe the author is working on those configuration tasks (see [1]).  Although I'm sure he and the Maven community would greatly appreciate a plugin maintained by hibernate-tools :)  I'd certainly like to see closer integration - feel free to propose this on the plugin mailing lists [2] if you're interested.
