Another workaround is to initialize the collection prior to calling PersistentMap.remove(). One way to do it is to add a remove(String key) method to your entity which does the following:

public void remove(String key) {
        Hibernate.initialize(this.getMapStuff());
        getMapStuff().remove(key);
    }

Granted not ideal to have the Hibernate class in your entity, but it work.
