Cleared up some things with Max on IRC.  Basically he has been keeping the SchemaExport and SchemaUpdate classes up-to-date with any of these changes he made.  So we should be fine to use this as the 'medium' for those tasks however they get initiated (SessionFactory building, ant tasks, maven plugins).

Each 'initiator' can then just focus on creating the appropriate Configuration needed for passing in to SchemaExport and SchemaUpdate constructors.
