Some of tests I'd specifically be interested in seeing:
What happens as you get nested CompositeUserTypes?
What happens as these default columns get too long (especially considering the commonality is 'toward the front')?
What happens to UserTypes that are not CompositeUserType whose mapping does not define columns?
etc...
