Nix the previous idea. Using a colon requires a change to the parameter parser since the token starts a named parameter. It's probably not worth the effort to make a change there. 

Maybe this is better:
SELECT * FROM {property hibernate.default_schema}.table 

Steve, what is the "function registry"? You mean of the dialect? I'd like to hear more about this.
