There should be the ability to enable/disable a CacheStore via JMX. This could be a temporary disabling of a configured cache store, but also the ability to completely remove a cache store from a chain of cache stores, and even the cache loader/store interceptors from the interceptor stack.

A specific "rolling upgrade" cacheloader will be needed to make rolling upgrades possible;
since a rolling upgrade should not be impossible even for who didn't think about it during initial deployment, we should provide some strategy to add the needed cacheloader without taking down the node.
