Can you check your quickstarts/conf/quickstarts.properties file and make sure that you have uncommented the username and password for the jbpm console:
# jBPM console security credentials (if org.jboss.esb.server.config=production)
  | #jbpm.console.username=admin
  | #jbpm.console.password=admin
  | 
This is needed when the jbpm console is security, which is the case when running the soa-p and running the production configuration.
