That's strange because I am running the wiki.ear exploded in my production environment (it's our departmental portal) without issues. Are you sure that you left the .ear extension on the directory? In other words, you should unpack wiki.ear into server/default/deploy/wiki.ear, and then wiki.war into server/default/deploy/wiki.ear/wiki.war, so the properties file is located at:

server/default/deploy/wiki.ear/wiki.war/WEB-INF/classes/org/jboss/wiki/filedatasource.properties
