Three options:

1) Using Arquillian API to restart AS using different <config>.xml - see ARQ-336.
2) Using AS Management API to reload AS config.xml - see the "snapshot" functionality - AS7-2347.
3) Using an annotation which would make Arquillian restart the container with appropriate <config>.xml for each tests.
