I ran in a debugger and looked a little closer.  

1.  If you access the Employee entity name or address, that should cause the Entity to actually be loaded.  I tried that manually in the debugger and could see the hit count increasing.  Try to change this first and dump the statistics again.

2.  You are accessing Hibernate api level statistics for native Hibernate code (it seems).  Is that what you wanted to test?  I was expecting that the JPA api would be used to read from the database (since the test is in the org.jboss.as.test.integration.jpa.secondlevelcache package).
