RESTEasy 3.0-beta-6 (since beta-5) provides a significant improvement:
JSON mapping can be defined via JAXB annotations instead of proprietary Jackson annotations.

I'll attach the zip file of the RESTEasy 3.0-beta-6 distribution to patch JBossAS 7.
