OK, so I used {{fast.xml}} and modified:
* {{UDP.mcast_port="45566"}}
* {{UDP.bind_port="7800"}}
* {{FD_SOCK.start_port="7000"}}

Then I mapped ports 45566, 7000, 7001, 7800 and 7801 and ran 2 Chat instances in 2 seperate docker containers. This worked flawlessly (although since I'm on MacOS, I had to open those ports on VirtualBox as well)...
