Are you using CDI in your application? CDI is enabled by default in EE7, if you are not using it can you try removing the subsystem and trying again?
I also notice that you are using infinispan? Are you using this for session replication?
The only thing I can think of is that something else is generating garbage, and forcing your data out of the new generation before the server is done with it.
