There is (or was) a request handler in Undertow which allowed you to limit the number of concurrent requests at the front end.  It's also possible that this particular problem (needing an extra thread to handle the invocation response) was fixed in WildFly 11 (at least I don't recall it coming up in testing), so it might be worth trying that as well.
