Do you have ejb3.deployer in your server/default/deploy directory? 

I just reread your message and missed the part where you said you used the "all" profile.  My network connection is too slow to download and verify, but as I recall the "all" profile is a J2EE 1.4 profile, not an EJB3 profile.
