I was going to point you to  http://www.jboss.com/index.html?module=bb&op=viewtopic&t=96791, but some of the links are really outdated.

The JBoss at Work book is a good intro, though outdated (if uses 4.0.3, I think).

The same goes for JBoss: A Developer's Notebook http://www.oreilly.com/catalog/jbossadn/

But as far as understanding how JBoss AS works, and how to get started with it, they are excellent.
