What I ended up doing is creating process variables with the same name as the tasks.  These variables contain hashmaps where I can add all sorts of variables.  I then created a class which extends HistorySession to set the due date of the task to the duedate value stored in the corresponding process variable.  This works and gives me what I need - I want a task to be two weeks late if a process was not initiated on time.  Now I have to figure out a better way to assign variables to tasks within the process definition ...
