The first jackrabbit errors in your logs are:

....
Caused by: java.lang.NoClassDefFoundError: org/apache/poi/hpsf/MarkUnsupportedException
    at org.apache.jackrabbit.core.query.lucene.JackrabbitParser.setTextFilterClasses(JackrabbitParser.java:124)
    at org.apache.jackrabbit.core.query.lucene.SearchIndex.setTextFilterClasses(SearchIndex.java:1922)

In your repository.xml that you generated via Guvnor, remove the <SearchIndex> element(s) and try again...lets see then what the logs say.
