you can use service task that does pretty much same as it was in jbpm4 - invoke a defined method of a java class. Take a look at the example  https://github.com/droolsjbpm/jbpm/blob/master/jbpm-examples/src/main/resources/junit/BPMN2-ServiceProcess.bpmn2 here.
