The default configuration is provided by webtools. It simply takes which facets your server supports and makes the default the highest version that the server supports. I've not yet found any API to prevent the default configuration from showing up.

The only work around is to have your server *not* support the seam 2.0 facet, which I think we can agree is not a good solution.
