The only way that something can be put "extra" in persistence.xml is if the original files we copied from had those artififacts - that was the case for Seam 1.2.0/1.2.1 and I fixed that in the seamgen in seam 1.2.1.EAP and for the Seam 2 CR and GA - so if your seam is one of these older versions then that explains it ,)
