Regarding entering test data, we intend to provide two ways to do it, 
1) Typing directly as you mentioned above,
2) Import message from a file

About how it works, it depends on the transport type of the Service, different transport Service testing client might work differently, in general, TestUI require user input message data, for JMS transport, TestUI will pass the message to a Queue using ServiceInvoker, 
for File transport, it will write the message into a file and save the file to the location specified in jboss-esb.xml file.
