You can solve the problem with the jsf libraries if you right-click the booking project and call Run As>Maven install.
As to the issue with the WEB-INF folder deployed to the root of the EAR project, there is a WTP bug - see https://bugs.eclipse.org/bugs/show_bug.cgi?id=247090 and http://jira.codehaus.org/browse/MNGECLIPSE-688?focusedCommentId=147974&page=com.atlassian.jira.plugin.system.issuetabpanels%3Acomment-tabpanel#action_147974

Could you try the following:

- start Eclipse in a new workspace
- do not create any Seam Runtime, JBoss Runtime or Database Connection profile
- call Help>Project Examples and import Seam Booking Example - EAR mavenized - Seam 2.1.1.GA
- in the Quick Fix Dialog that appears, click the Finish button without calling any quick fix
- right-click the testng.xml file and select Run As>Run TestNG Suite
