I tested starting up the EAP server and opening some jsp files and it was reasonably fast. Starting up the server took around a minute and opening a file took a couple of seconds.
How much RAM do you have? I suppose that could make a big difference, but I don't know what else could.

I tried it on a MacBook Pro 15" early 2008 model with Snow Leopard, 4 GB of RAM and the same java version as you have.
