Unfortunately, the documentation is inconsistent. A few lines bellow you can read:

command - required property. Needs to be one of:
NewProcessInstance-Command, StartProcessInstanceCommand,
or Cancel-ProcessInstanceCommand

However, the best place to look is the source code. In the file
jbossesb-src/product/services/jbpm/src/main/java/org/jboss/soa/esb/services/jbpm/Constants.java
you can find the following enum:

,NewProcessInstanceCommand
,StartProcessInstanceCommand
